Pineapple Rum Punch Recipe

This Brazilian Pineapple Rum Punch is literally the best way to celebrate SUMMER! A whole fresh pineapple, limes, a little mint, and Brazilian cachaça rum will fill up your pitcher with tropical goodness for you to share with your amigos all summer long.

Summer is upon us, amigos, so I’m over here prancing around my backyard nearly every weekend, smelling like sunscreen, and sipping on all things rum. Brazilian cachaça rum to be precise.

For those of you who don’t know, cachaça is a Brazilian distilled liquor made from the fermentation of raw sugarcane juice. So technically, cachaça is a type of rum. Cachaça is pretty reasonably priced, and here in California is fairly easy to find in liquor stores such as BevMo, and even in grocery stores like Vons. You can use any white rum here, but, if you haven’t tried Brazilian cachaça rum, this tropical cocktail recipe will be a great opportunity to do it. Plus if you do, you can just pretend you’re having a pineapple caipirinha!! What’s not to love?

Pineapple rum punch ingredients

All you’ll need are a handful of easy to find ingredients to make this delicious fresh pineapple drink. Here they are:

  • Rum – I like to use Brazilian cachaça rum, but any other white rum will work
  • A whole fresh pineapple
  • Sugar
  • Mint leaves
  • Limes
  • Ice, ice baby!!

How to make rum punch

– recipe makes about 6 servings

  1. Muddle the lime

    First you need to cut a lime in 4 pieces. Then, just add the pieces to a cup or cocktail shaker, add some mint leaves, and muddle away!

  2. Add the booze

    Add the rum, or the cachaça, to the muddled minty-lime juice and stir. The recipe calls for a cup of rum, but you can add more or less – I won’t judge! 😛

    Then, set this mixture aside while you make your creamy pineapple juice. Letting the lime and the mint sit in the alcohol for a little bit, will make sure all those minty-lime flavors infuse into the booze.

  3. Prep the pineapple

    Meanwhile, peel, core then dice a whole fresh pineapple. Discard the skin and the core, then, add the pineapple chunks into a blender with a little sugar and pure it. You’ll blend this for a few minutes, until there are no chunks left, and you’re left with a super creamy, foamy mixture. No need to add water or ice here. We basically want to make a pineapple cream!

    After that, add that creamy pineapple juice to a pitcher, or punch bowl, and top it with ice.

  4. Combine the booze and the juice

    Remove and discard the limes from the cup. Then add the minty-lime booze mixture to the pineapple juice. I prefer my drink to be more pineapply, so I try to not add all the mint to the pitcher, to avoid the mint flavor from taking over. But, you can pour all the mint leaves in if you want, or just a few, or none at all. Up to you!

  5. Stir

    And that’s it! Give everything a stir, serve and have fun!

Pineapple Rum Punch Recipe

Ingredients

  • 1 whole fresh pineapple, peeled and cored
  • 1-2 tbsp sugar depending on how sweet your pineapple already is
  • 1 whole lime
  • 1/4 cup fresh mint leaves add more or less depending on your taste
  • 1 cup white rum, such as Brazilian cachaça rum

Instructions

      Oh boy this made my mouth water. It is not proper spring here in Sweden yet – or rather, it’s Swedish spring, that is to say still single-digit temperatures Celsius. But we’re being brave and on sunny days it’s nice to sit on the patio. It’s only a matter of weeks until we will have long hours of sunlight and the temperature will go up.
