A super delicious, sweet, buttery, herby pork loin, with some collard greens, cos you know, collards are totally my thing.

1. "Wash" the pork with the lime juice.

PREP THE PORK

2. Season pork loin with salt and pepper, on all sides, set aside for 10 mins.

SEASON

3.  Add the garlic, the olive oil, the mustard, the rosemary, the honey and the salt to a blender and pulse until creamy.
