Beef Stroganoff – A Classic Dish With a Brazilian Twist

Beef Stroganoff, or Estrogonofe de Carne, as we call it in Portuguese, is a very popular dish in Brazil. Despite the fact that estrogonofe de carne is part of the everyday Brazilian life, this dish is actually Russian!

The biggest difference between the classic Russian and the Brazilian stroganoff is that the classic version uses mustard, vegetable or beef stock (occasionally uses tomato sauce, too) and is finished with sour cream. The Brazilian version uses tomato sauce (or paste) mixed with heavy cream and is almost always served with white rice or potato sticks (batata palha).

In addition to the Brazilian version, there are so many other different variations of beef stroganoff around the world, and different ways to serve it. Some places serve it with crepes, pancakes, or noodles and others make the dish with different meats altogether, even sausage!

Brazilian Beef Stroganoff Ingredients

For your Stroganoff ingredients, you’re going to need:

  • Olive oil
  • High-quality beef cut into cubes or sliced into strips
  • Diced onion
  •  Brazilian sofrito or Cloves of minced garlic
  • Sliced white mushrooms
  • Tomato paste
  • Ketchup
  • Worcestershire sauce
  • Heavy cream
  • Salt and pepper to taste

What Meat to Use for Beef Stroganoff

You’re going to want to use quality cuts of beef because they’re tender, juicy and have the most flavor. Yes, you can tenderize tougher cuts of beef, but that just adds to the work and the mess, besides, it really just isn’t worth it.

  • Boneless Ribeye

How to Make Beef Stroganoff the Brazilian Way

The Sear:

Step 1. Season your beef and let it sit on the counter for about 20 minutes. We’re doing this to make sure the beef isn’t straight-out-of-the-fridge cold when we add it to the pan. If the beef is cold, it reduces the heat in the pan, and it slow cooks the meat, causing it to become chewy. No thanks!! Then, place the beef in a hot oiled pan and give them a quick sear (30 seconds to a minute). The quick sear is important for the same reason as the temperature of the meat going into the pan. If you saute it for too long, it starts to get tough.

Step 2. Remove the beef and set it aside on a plate and then add the onions to the hot pan. Saute the onions for 2-3 minutes and then add in the garlic and saute for another minute or two.

Step 3. Add in the sliced mushrooms.

The Sauce:

Step 4. Cook the mushrooms for about 5 minutes until they have wilted down.

Step 5. Add the beef back in, then the tomato paste, Worcestershire sauce, and ketchup. Saute for about 2 minutes while stirring.

Step 6. Add water and let the pan simmer for a few minutes. Make sure to stir and scrape any bits of food off of the sides and the bottom of the pan.

Step 7. Add in the heavy cream and let the beef stroganoff simmer just a few minutes longer. Give it a final stir, and that’s it.

Step 8. Scoop, garnish and serve!

Brazilian Beef Stroganoff

This Brazilian Beef Stroganoff is a delicious comfort food that your family is going to love. It's made with tender pieces of beef, smothered in a creamy sauce, and typically served with little potato sticks on the top, adding fun and texture. The best part? Ingredients

  • 1 Tbsp olive oil
  • 1.5 lbs high quality beef such as fillet mignon, beef tenderloin, top sirloin, ribeye steak cut into cubes or sliced into strips
  • 1 medium onion, diced
  • 2 Tbsp Brazilian sofrito or 3 cloves of garlic, minced
  • 8 oz white mushrooms, sliced
  • 6 oz tomato paste
  • 2 Tbsp ketchup
  • 2 Tbsp Worcestershire sauce
  • 2 cups heavy cream
  • salt and pepper to taste

Instructions

  • Season the beef pieces with salt and pepper, and let it sit on the counter at room temperature for about 15-20 minutes.
  • Place a large heavy bottomed pan or dutch oven over medium to high heat. Add the olive oil, and when the oil is hot, add in the beef pieces, and quick sear them in a single layer, no longer than a minute or 2.
  • Remove the beef from the pan, place it on a plate and reserve.
  • Using that same pan, sauté the onions over medium heat – about 2-3 minutes.
  • Add the garlic, and sauté until fragrant – about 1-2 minutes.
  • Add the sliced mushrooms, and sauté until the mushrooms wilt down – about 5-6 mins.
  • Add the beef back in, then the tomato paste, the Worcestershire, and the ketchup and saute for about 2 minutes, stirring.
  • Add 1/4 cup of water to the pan, and simmer a couple of minutes, stirring and scraping any bits off the sides and bottom of the pan.
  • Add in the the cream, and simmer just a couple more minutes and you're all done!

      SO DELICIOUS! This is my go-to brazilian beef stroganoff recipe!! My boyfriend is Brazilian and is extremely particular with all things Brazilian cuisine in America, and this passed the test with FLYING colors! The only thing I add here is a small amount of mustard to the pan before adding the cream (personal preference, and I dont measure it… just go by taste). Thanks so much for this recipe!!
