Chimichurri Wings
These chimichurri chicken wings are amazing! Crispy, juicy wings, paired with a zesty cilantro chimichurri sauce for a fresh, vibrant kick that’s perfect for summer gatherings and just as delicious all year long. Bake them in the oven, grill to perfection or toss them in the air fryer. There is no marinating required, and they are ready in just 30 minutes!

I love chicken wings. Period. They’re a cheap and delicious way to feed a crowd, and my favorite thing about this particular recipe is how insanely EASY it is to make.
In fact, this is my go-to recipe when I feel like I don’t want to cook anything! It’s that simple.
These wings are delicious grilled, baked or even air fried. And we make them better with a sauce!
There are plenty of unique wing sauces that I love, but my love for cilantro runs deep, so this cilantro chimichurri sauce is probably my favorite.

Ingredients to make chimichurri wings:

Making changes to a recipe can result in recipe failure. Substitutions can greatly alter your final results.
- Chicken wings — we want them to be halved at the joints and the tips discarded.
- Coarse salt — this is the best for grilling! I like this one I buy from Amazon, but any coarser grilling salt will work.
- Black pepper — freshly ground is awesome, but the pre-ground bottled kind works in a pinch.
- Olive oil
- Cilantro chimichurri — I use my easy-to-make cilantro chimichurri recipe, and trust me, it makes all the difference! If you have leftover or store-bought chimichurri, that should work, too, although I haven’t tried those. If you choose to make my cilantro chimichurri, you can find the full recipe with quantities and instructions in my cilantro chimichurri recipe post, but here’s what you’ll need:
- Fresh cilantro
- Garlic
- Red onion or a shallot
- Red pepper flakes
- Dried oregano
- Red wine vinegar
- Olive oil

- A grill, an oven or an air fryer
- Blender or food processor
- Tongs

How to make Grilled Chicken Wings with Chimichurri Sauce
Preheat the grill. You want it hot to make these wings and to get the skin nice and crispy!
Make the sauce. If I don’t have sauce leftover in my fridge, I make this first.
The chimi needs about 20 minutes right out of the blender to rest, which is pretty much all the time we need to get the wings grilled.
The full cilantro chimichurri recipe is here. And the great news is all you need to do is throw the ingredients in a blender buzz, buzz, buzz, and call it a day.
Set this aside for later!
Season the wings. You’re going to season the wings with coarse salt, like the one used on Brazilian barbecues, a touch of black pepper and some olive oil to help them crisp on the grill.
Toss them all together in a bowl.
Here’s the MASTER grilling tip!
This is a Brazilian barbecue trick that we learn when we’re first learning how to grill. When grilling with coarse salt, make sure to gently “hit” the wings on the grill when you flip the wings, so some of that coarse salt falls off. If all the coarse salt sits on the wings throughout the entire cooking process, the wings could become salty.
Grill the wings. Place the wings on the hot grill and cook until they’re crispy. This will be about 10-15 mins on each side, depending on the temperature of your grill.
When the wings are crispy, remove them from the grill.
Serve them with cilantro chimichurri drizzled on top, as a dipping sauce, or toss the wings directly in the chimichurri for maximum flavor, which is my favorite!

How to make Wings in the Oven
Position the oven rack in the center of the oven, then preheat the oven to 450°F/230°C.
While the oven is preheating, season the wings with the coarse salt, black pepper and a drizzle of olive oil to help them crisp up, and toss them all together in a bowl.
Line a large baking sheet with aluminum foil, or parchment paper, then place a cooling rack on top. Arrange the wings on the wire cooling rack, leaving some space in between them so air circulates and helps them become crispy.
Bake them 25-30 minutes, flipping them halfway through.
If you don’t have chimichurri sauce leftover in the fridge, make the sauce while the wings bake.
When the wings are crispy, remove them from the oven. Serve them with cilantro chimichurri drizzled on top, as a dipping sauce, or toss the wings directly in the chimichurri for maximum flavor, which is my favorite!
How to make Wings in the Air Fryer:
Preheat the air fryer to 400°F/200°C.
While the air fryer is preheating, season the wings with the coarse salt, black pepper and a drizzle of olive oil to help them crisp up, and toss them all together in a bowl.
Arrange the wings on the air fryer basket, leaving some space in between them so air circulates and they get crispy. Depending on the size of your air fryer, you may need to do this in batches.
Air fry them 15-20 minutes, giving them a shake halfway.
If you don’t have chimichurri sauce leftover in the fridge, make the sauce while the wings air fry.
When the wings are crispy, remove them from the air fryer. Serve them with cilantro chimichurri drizzled on top, as a dipping sauce, or toss the wings directly in the chimichurri for maximum flavor, which is my favorite!
How to store leftovers:
Store leftover wings in the refrigerator in an airtight container for 3-4 days max.
Reheat in the oven or air fryer until crispy, and enjoy!
Tips and tricks for making the best cilantro chimichurri wings
- Make the sauce first… or use leftover sauce for extra laziness!
- Season the wings well! The coarse salt that Brazilians use for barbecuing is key.
- Don’t forget to gently tap the wings on the grill on each turn, or give them a shake in the air fryer basket so some of that coarse salt falls off. If you don’t, the wings could become salty.

- When the wings are crispy, remove them from the grill.
- Serve them with cilantro chimichurri drizzled on top, as a dipping sauce, or toss the wings directly in the chimichurri for maximum flavor.
Baking Instructions
